Psychologically Approaching Dish Plating: An integrative Review and Introduction to a New Research Paradigm

The visual presentation of dishes is central to our dining experiences, serving as a powerful tool to improve restaurants’ commercial operations, enhance diners’ welfare, and contribute to food and culinary tourism. Nevertheless, effectively designing dish plating via industrial savoir-faire poses challenges. Therefore, a new research paradigm is proposed, utilizing psychological theories and methods to study dish plating. Consequently, its theoretical feasibility and methodological adoption are analyzed through an integrative review. It is shown that the intersection between dish plating and psychology can generate unique advantages at both theoretical and managerial levels.
